Strawberry Shortcake for One
This is a perfect way to enjoy a summer shortcake without turning on the oven. Enjoy the summer’s bounty and stay cool while you do it. This little white cake is so simple and so versatile I’m sure you will find multiple ways to enjoy it over and over again.
Prep time: 8 minutes
Cook time: 1 minute
Yield: 1 mug cake
Ingredients:
2 large strawberries
1 teaspoon granulated sweetener
1 tablespoon unsalted butter
The white of 1 large egg
1/4 teaspoon vanilla extract
1/4 cup Good Dee’s pancake mix
2 Tablespoons whipped cream
Directions:
Slice or mash the strawberries in a small bowl, mix with the granulated sweetener, set aside while you prepare the cake.
Place the butter in a 12-ounce mug and microwave until melted, about 45 seconds.
Mix the egg white and vanilla extract into the butter
Add the pancake mix and stir well, making sure everything is completely mixed on the bottom of the mug.
Microwave on full power for one minute until cake is risen, feels slightly firm to the touch and has started to pull away from the sides of the mug.
Turn the cake out of the mug and allow it to cool for a few minutes.
Split it into two layers and put half of the strawberries with their juice on the bottom half, top with one tablespoon of whipped cream. Put the top layer on and repeat with the remaining strawberries and whipped cream.
